
'These masala roasted walnuts are spicy and inspired with our freshly ground Indian spices- a little too good. Make a big batch and pop them on salads throughout the week for a health packed lunch- or just eat them straight out of the bowl. MASALA WALNUTS Ingredients 1½ cups California walnuts 1 tbsp coriander seeds 1 tsp cumin seeds (jeera) 15-20 black peppercorns ¼ inch cinnamon 3-4 dried red chillies Black salt to taste Salt to taste 2 tsps chaat masala 1 tsp oil 2 tbsps honey Method 1. To prepare masala, dry-roast coriander seeds, cumin seeds, peppercorns and cinnamon in a non-stick pan till fragrant. 2. Deseed and grind red chillies alongwith roasted spices into fine powder. 3. Dry-roast 1 cup California walnuts in the same non-stick pan till golden brown and crisp. 4. Transfer in a bowl and slightly cool. Add black salt, salt and chaat masala to ground spice mixture and grind again. Add 2-3 tsps of masala to toasted California walnuts and mix well. 5. Heat ½ cup California walnuts and oil in the same non-stick pan and sauté till golden brown and crisp. 6. Transfer in another bowl. Add 1 tsp masala to roasted California walnuts and mix well. 7. Add 1 tbsp honey to dry-roasted spiced California walnut mixture and mix. Add the oil-roasted California walnut mixture and remaining honey and mix well. 8. Serve or store in a jar.
